In Jain Dharma, no — one should not eat humans.

Eating any living being involves hiṃsā (violence), which is against the Jain principle of ahimsā. A human body is especially sacred and must be treated with utmost respect and non-violence.

In Jainism, the path is:

• Ahimsā — non-violence
• Satya — truth
• Asteya — non-stealing
• Brahmacharya — continence
• Aparigraha — non-possessiveness

So, consuming human flesh is completely opposed to Jain ethics and conduct.
