    Here is a simple Jain Undhiyu recipe made without onion, garlic, potato, or other root vegetables.

    Ingredients

    For the vegetable mix:
    • 1 cup surti papdi / valor papdi
    • 1 cup purple yam pieces or sweet potato pieces
    • 1 cup suran pieces, if you use it in your Jain tradition
    • 1 cup fresh tuvar dana or green peas
    • 1 cup baby brinjals, slit
    • 1 cup raw banana pieces
    • 1 cup methi muthia
    • 1/2 cup fresh coconut, grated
    • 2 tbsp sesame seeds
    • 2 tbsp ground peanuts
    • 1 tbsp coriander-cumin powder
    • 1 tsp turmeric
    • 1 to 2 tsp red chili powder
    • 1 tsp garam masala
    • 2 tbsp jaggery
    • Salt to taste
    • 3 to 4 tbsp oil
    • 1 tbsp lemon juice
    • Fresh coriander for garnish

    For muthia:

    • 1 cup fenugreek leaves, chopped
    • 1 cup wheat flour
    • 1/4 cup gram flour
    • 1 tsp sesame seeds
    • 1/2 tsp turmeric
    • 1 tsp chili powder
    • Salt
    • 1 tsp oil
    • Water as needed

    Explanation

    Method:
    1. Prepare the muthia

    - Mix all muthia ingredients into a soft dough. - Shape into small logs or dumplings. - Steam for 10 to 12 minutes. - Cut into pieces and keep aside.

    1. Prepare the spice mixture

    - Mix grated coconut, sesame seeds, peanuts, coriander-cumin powder, turmeric, chili powder, garam masala, jaggery, salt, and lemon juice. - Add a little oil to make a thick stuffing.

    1. Stuff the vegetables

    - Slit the brinjals and apply the spice mix inside. - Coat other vegetables lightly with the spice mix.

    1. Cook the Undhiyu

    - Heat oil in a deep pan. - Add all vegetables and mix gently. - Add a little water, cover, and cook on low flame. - Cook until vegetables are soft but not mushy. - Add the steamed muthia at the end and cook for 5 more minutes.

    1. Serve

    - Garnish with coriander and coconut. - Serve hot with rotla, puri, or thepla.

    In Jain cooking, food is prepared with care, purity, and non-violence. A Jain Undhiyu keeps the traditional festive spirit while following ahimsa by avoiding root vegetables and ingredients that are not suitable in Jain practice.
