Why no potato
In Jainism, potatoes are avoided because they are root vegetables. Jain teachings emphasize ahimsa (non-violence) to the highest degree, which includes minimizing harm to even the smallest forms of life. Root vegetables like potatoes, onions, garlic, carrots, and others are considered to contain many tiny life forms (sukhshma jiva) within them. When these vegetables are uprooted, countless microorganisms and the plant itself are destroyed, resulting in greater violence.
Additionally, harvesting root vegetables kills the entire plant, whereas harvesting fruits or leaves allows the plant to continue living. Therefore, out of respect for all living beings and to practice the principle of non-violence, Jains avoid eating potatoes and other root vegetables.
