    How to make Jain Pav Bhaji

    Here is a simple Jain-friendly Pav Bhaji recipe. It avoids root vegetables (like potatoes, onions, garlic) in line with traditional Jain dietary guidelines, which many households follow in both Digambar and Shwetambar traditions. If your household allows some root vegetables, you can adapt, but I’ve kept it root-free here.

    What you’ll need (serves 4)

    • 1 cup cauliflower florets
    • 1/2 cup green peas (fresh or frozen)
    • 1/2 cup corn kernels (optional)
    • 1 cup chopped capsicum (bell peppers)
    • 2 medium tomatoes, chopped
    • 1-inch piece ginger, finely grated
    • 1 green chili, chopped (optional, to taste)
    • 2 tablespoons oil or ghee
    • 1 teaspoon cumin seeds
    • 1/2 teaspoon turmeric powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon cumin powder
    • 1 tablespoon pav bhaji masala (ensure a vegetarian, Jain-friendly version; many brands are pure veg)
    • Salt to taste
    • Fresh cilantro, chopped
    • 1 tablespoon lemon juice (optional, for brightness)
    • Pav buns (bread) or substitute with plain whole-wheat buns; ensure no animal fats or eggs in the buns if you’re strictly Jain

    Optional garnish

    • Fresh grated ginger, chopped cilantro, and lemon wedges

    Steps 1) Prep the vegetables: Rinse all vegetables. Break the cauliflower into small florets. Have the peas and corn ready.

    2) Cook the vegetables: In a large pan, heat oil/ghee. Add cumin seeds and let them crackle. Add grated ginger and green chili; sauté for a minute.

    3) Build the base: Add chopped tomatoes and a pinch of salt. Cook until tomatoes turn soft and mushy.

    4) Flavor the mix: Stir in turmeric, coriander powder, cumin powder, and pav bhaji masala. Cook for about a minute until fragrant.

    5) Add vegetables: Add cauliflower, peas, corn, and capsicum. Mix well to coat with spices. Add about 1/2 cup water (adjust as needed) and simmer covered until all vegetables are very soft. This helps them mash together.

    6) Mash and simmer: Use a potato masher or spoon to mash the vegetables to a thick, bhaji-like consistency. If it’s too thick, add a little water and simmer for a few more minutes. Adjust salt.

    7) Finish: Stir in chopped cilantro and lemon juice if using. Taste and adjust spices as needed.

    8) Serve: Toast pav buns lightly on a dry pan if desired. Serve the hot bhaji with pav. You can top the bhaji with a little chopped cilantro and a squeeze of lemon.

    Tips

    • If you don’t have pav bhaji masala, you can boost flavor with extra cumin, coriander, and a pinch of asafoetida (hing) in very small amounts.
    • For thicker texture, mash more; for thinner, add a bit more water and cook longer.
    • If you want extra protein, add cooked chickpeas or paneer (cottage cheese) in small cubes at the end, keeping in mind Jain dietary preferences about dairy.

    Important notes on Jain guidelines

    • Root vegetables are typically avoided in Jain cooking; this recipe uses no potatoes, onions, garlic, or other underground vegetables.
    • Ensure all ingredients (especially masalas and buns) are plain-vegetarian and do not contain any animal-derived ingredients. Some households avoid yogurt or dairy entirely; omit if you follow a strict non-dairy Jain diet.
    • Differences between Digambar and Shwetambar: both traditions commonly avoid root vegetables, but regional/home practices vary. If you follow a specific ritual or family rule, adapt accordingly.
